Our 2011 Scintillare is a aromatic and refreshing sparkling wine with its pale golden color, fine rivulets of bubbles, delightful nose and palate of bright citrus, golden apple, pear, and white peach, with a hint of minerals.
For this charmed vintage, we decided to create a unique silk-screened bottle that we can’t wait to share with you. Crafted exclusively from a classic Italian white grape called Vernaccia that we grow in the Santo Giordano Vineyard on our very own hilltop estate in Sonoma. This year, only 750 cases were produced, so you’ll want to stock up, not only for the holidays, but for a random Tuesday night that you want to instantly transform into a special occasion.
To create the persistent, delicate bubbles you’ve come to expect in our sparkling wine, we use the more labor-intensive, yet distinctly rewarding Méthode Champenoise. After the initial cool, slow, stainless steel fermentation, we add the “liqueur de tirage” (i.e. yeast and sugar) to the wine, seal it, and lay it up for six months “en tirage” for its secondary fermentation in
the bottle, which naturally traps the carbon dioxide gas produced by the yeast as it consumes its food, sugar.
Our estate-grown Primitivo Rose' is a dry rose made using a cool fermentation, which preserved the rich aromas and flavors of raspberry, sour cherry, sweet citrus, and roses.
This wine was made using the French saignée process, in which the juice is drained off after a short maceration time, extracting a beautiful deep pink color. This dry wine can be served chilled or at room temperature.
