From sourcing ingredients, knife handling techniques and tips, perfecting sushi rice, and more. Chef Ed has over 27 years of experience, specializing in sushi under the training of Japanese and Hawaiian chefs. He has owned and operated Sushimotos, a sushi/Asian restaurant in the heart of Sonoma for the past 12 years and has a passion for teaching. Ed’s take on sushi is heavily influenced by Hawaiian comfort food and meticulous presentation.
