Pair with spaghetti Bolognese. The wine’s acidity slices through the rich, meaty sauce, while its savory notes complement the tomatoes and herbs. Alternatively, pair with a pizza topped with mushrooms, olives and sausage, as the Sangiovese’s earthy and spicy tones enhance the savory toppings.
Our Estate Sangiovese is comprised from fruit from the Hillside Block and the Terrace Block from our estate vines. These are a blend of the Rodeno clone and clone 2. We also added in a small amount of Barbera from the Shenandoah Valley to add to the wine’s texture.
We hand-harvested the fruit in the cool early morning, then destemmed it and initiated a 48-hour cold soak to gently extract color and tannin. Tanks were then warmed to 85°F and inoculated with F83 yeast, carefully selected for its fermentation characteristics. Twice-daily pumpovers for 14 days ensured optimal extraction from the pomace. Following pressing and settling, the wine aged for 16 months in oak barrels, 39% new, before being bottled.
